Easy Beef Taquitos

So I have a very easy recipes for baked beef taquitos that I sort of just through together one night. They are so yummy, and we like to make a tray full so we have left overs to eat for lunch later in the week.

Ingredients:
Tortillas (I buy the raw ones from Costco, and I always have them on hand)
Shredded Beef (another ticket item I always have from Costco, it is in the same aisle as the canned chicken, it does not need to be cold, so I keep it in my pantry to use whenever!)
Olive Oil
Garlic
Onion (if you like)
Red Bell Pepper
El Pato Tomato Sauce (in the Mexican food aisle)
Pepper Jack Cheese
Salt
Cooking Spray

So this is so simple it is ridiculous. I saute the garlic, onion, and bell peppers in olive oil, and then add half the bag of the shredded beef. The beef is already cooked, so you basically leave it in the skillet until it is heated all the way through. I pour in the El Pato sauce and let it simmer a while so the beef soaks up all the flavor. While that is going, I heat up my tortillas and shred the pepper jack cheese. Once it is all ready, I add the beef and cheese to a tortilla (as much as you want depending on the size of your tortilla), roll it up like a taquito, and place them in a baking dish coated with cooking spray. Once your baking dish is full of yummy taquitos, spray the top with cooking spray, and sprinkle a little salt on top. Then place in the oven at 425 for about 15-20 minutes. I like to watch them and take them out golden brown so the ends are crunchy. I wish I had a picture of this yummy dish, but we ate them the other night, and I didn't know I would be typing out the recipe. Actually I am snacking on the last 2 right now, and they are not picture worthy as left overs, so maybe next time!
