Menu

So I decided that we have entirely to much food in our freezer and pantry (due to my Costco obsession), so I am making it my goal to make dinner for the next two weeks (or more if I can) with out making any trips to the grocery store. I have plenty of meat (it is all frozen) and a ton of ingredients, so I think I can pull it all together. We are trying to find new ways to save money and be more budget conscious in hopes that I won't have to go back to work. So to start out, I am going to make meal plans and try to grocery shop as little as possible. The only things I plan on buying over the next few weeks are things that can go bad; eggs, milk, fruits and veggies since I can't keep those stocked in my freezer or pantry. So, here are the meals I know I can make right now without making a trip to the store. It is almost embarrassing how much meat we have because we buy at Costco or on sale at the grocery store and put it in our extra freezer. For example, the chuck roast we bought over a week ago was buy 1 get 1 free, so now we have 2 chuck roasts just taking up freezer space! I need to get cooking!! I hope that by posting this on my blog, you can keep me accountable and make sure I am still cooking each night, and not sneaking off to the grocery store!

I am starting my meals on Monday, because we have plans all weekend and no time to cook.

Monday:
BBQ Chuck Roast
Green Beans

Tuesday:
Spinach Chicken Parmesean

Wednesday:
Feta Turkey Burgers
Mixed Veggies

Thursday:
BBQ Beef Sandwiches
Chips

Friday:
Tacos
Side Salad

Saturday:
Pizza (we have frozen ones)
Mixed Veggies

Sunday:
No meal plan, probably eating left overs.

Monday:
Turkey Chili
Spinach Salad

Tuesday:
Spaghetti and meatballs

Wednesday:
Creamy Chicken Taquitos
Spinach Salad

Thursday:
Lasagna (Frozen from Costco)
Steamed Spinach (can you tell we LOVE spinach, and we of course buy the huge cheap $3 bag at Costco!)

Friday:
Chicken Enchiladas

Saturday:
Wedding! No cooking day!

Sunday:
Eating left overs

Monday:
Chicken Pad Thai
Edamame

Tuesday:
Hamburgers on the grill
Cold Veggies

Wednesday:
Sloppy Joe's
Spinach Salad


Ok so that is all I can come up with for now. I am excited to see how it goes and see if I can really make all of this without making trips to the store. I will update you on my progress throughout the next few weeks. If you have any suggestions for meals, please let me know.

Moriah! That's so funny that you put at the end if you have any suggestions for meals to let you know because I was already thinking of a meal to suggest since you said you had two chuck roasts. Ok so if you guys like Mexican food then I think you will want to try making machaca beef burritos. What you do is you take the chuck roast and cook it in a crock pot. If you slow cook it then it's better. You add onion, pase salsa (another kind of salsa would probably would work too), and a packet of taco seasoning. It's really tasty. Just an idea that you might like to try. I'm gonna have my husband lay the artificial grass tomorrow. Thanks again!

This is so fun! Cam and I are on a very tight budget and have to do the sparse grocery buying often. It makes it so much more interesting! I'm anxious to hear how it goes...Right now we're trying to make it until May with our very little food we have. It definitely makes it interesting :) Good luck! you can do it!

Hey I do a similar thing your first friend suggested with the roast--I cook a traditional roast the first night w/ potatoes and carrots. Then the second meal with that I'll make bbq beef sandwiches. And also I'll add some seasoning to the leftovers and make beef enchiladas, tacos, taquitos....something mexican. I do a "roast week" pretty often in the summer b/c you can do one night in the crockpot and pretty much microwave the other two nights.
